The Medium blend is what most people find to their liking, if they are neither Jack Spratt nor his wife! We make this from sweet dessert apples, blended with some Bramleys to give the bit of tanginess. Depending on the season, the dessert apples which we use can be one or two or three of the following varieties: Katy, Discovery, Tipperary Pippin, Jupiter, Karmijn, Elstar or Jonagold.

Its all about tasting the juices and the blends to get the right balance of sweetness, sharpness, and general flavour.
